Sweet peaches, smoky grilled paneer and a little chaat masala. The sort of salad that quietly becomes dinner.Every summer we buy peaches with the best intentions. Some get eaten over the sink. Some make it into desserts.

Grilled Paneer, Peach & Chaat Masala Salad

Ingredients

  • 8 oz paneer, cut into thick slices

  • 3 ripe peaches, cut into wedges

  • 4 cups arugula or mixed greens

  • ½ small red onion, very thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon Motherland Chaat Masala, plus more for finishing

  • Salt

  • Freshly cracked black pepper

  • Optional: Fresh mint leaves

  • Optional: Toasted pistachios

Directions

  1. Heat a grill or grill pan over medium-high heat.

  2. Brush the paneer and peaches lightly with olive oil.

  3. Grill the paneer for about 2–3 minutes per side until lightly charred.

  4. Grill the peaches for 1–2 minutes per side, just until they pick up a little color.

  5. In a large bowl, combine the greens and red onion.

  6. Whisk together the remaining olive oil, lemon juice and 1 teaspoon of chaat masala. Season with a small pinch of salt and black pepper.

  7. Toss the greens lightly with the dressing.

  8. Arrange the grilled peaches and paneer over the salad.

  9. Finish with another light sprinkle of chaat masala.

  10. Add mint or pistachios if you're using them.

  11. Serve while the paneer is still warm.
