Grilled Peaches with Fennel and Vanilla Ice Cream

Warm peaches, fragrant fennel sugar and slowly melting vanilla ice cream make a dessert that requires very little effort and receives rather more credit.

Ingredients
6 ripe but firm peaches
2 tbsp granulated sugar
Pinch kosher salt
1 tbsp neutral oil
1 tsp finely grated lemon zest
1½ pints vanilla ice cream
2 tbsp honey (optional)
Directions
Toast the fennel seeds in a dry skillet for about 1 minute, until fragrant. Cool, then crush them finely with the sugar and salt.
Heat a clean grill or grill pan to medium-high.
Halve and pit the peaches. Brush the cut sides very lightly with oil.
Grill cut-side down for 3–4 minutes, without moving them, until marked and beginning to soften. Turn and grill for 1–2 minutes more.
Arrange the warm peaches on a serving platter. Sprinkle with the fennel sugar and lemon zest.
Add scoops of vanilla ice cream just before serving and drizzle with honey, if using.
Put the platter in the middle of the table and act surprised when none remains.
