This is weeknight cooking — fast, satisfying, one pan. Jeera aloo (cumin potatoes) is a classic for a reason: the cumin goes nutty in hot ghee, the potatoes soak it up, and the whole thing has more flavor than it has any right to for the time it takes. The fried egg on top turns it into a meal.
